It’s been a long, long five weeks of socially distancing at home. Working from home. Kids schooling from home. Pets wondering why we’re still at home. And vacationing from home - on our balconies, back patios and front porches.
While we’re escaping the mundane of our living room, kitchen and bedroom, a wine or beer just won’t bring us to full relaxation mode. Sometimes, we need a frozen, fruity concoction to conjure images of tropical breezes, sun-kissed skin and pure bliss.
While enjoying summer-like temperatures on my back patio this past weekend, I was inspired to riff on the perfect Dole Whip with Rum featured on the menu of Tamu Tamu Refreshments at Disney’s Animal Kingdom park. Home to one of the best theme park rides, Flight of Passage, and the best live entertainment, Festival of the Lion King, Animal Kingdom is expansive and doesn’t offer much shade. With all that walking in the hot sun, a DOLE Whip with coconut or dark rum offers a cool reprieve. Ahhhh … we can’t wait for Walt Disney World Resort to open so that we can enjoy our favorite boozy treat on-site. In the meantime, let’s enjoy a version at home!
Because I do not own an ice cream maker (nor do I possess the patience to wait for something to freeze), I decided to create a DOLE Whip-inspired Colada. The ingredients are pretty basic:
Frozen pineapple chunks
Frozen pineapple concentrate
Pineapple juice
Coco Lopez (or any type of cream of coconut)
Coconut milk
Rum
Blender
Put the frozen ingredients into the blender first - pineapple, pineapple concentrate. Add ice for a frothy texture. Then add the liquids - pineapple juice, coconut milk, Coco Lopez and rum. Perhaps more rum.
Blend.
Put on your favorite vacation play list.
